PHYSICAL-CHEMICAL CHARACTERIZATION OF ARTISANAL CACHAÇA MARKETED IN THE MUNICIPAL MARKET OF CORONEL MURTA-MG

Abstract

The term cachaça is used to designate the sugarcane distillate produced exclusively in Brazil, whose alcohol content varies from 38 to 48% vol. This beverage produced in copper stills has better sensory quality when compared to that produced in stills made with other materials, such as stainless steel, aluminum and porcelain. During its production process, contaminants and undesirable substances may arise that can affect the quality of the beverage. Thus, the present work aims to perform physical-chemical analysis, such as alcohol content, pH and copper quantification in five samples of artisanal cachaça sold in the city of Coronel Murta-MG. The alcohol content was determined using the densimetric method and the copper concentration was determined using the UV-Vis spectrophotometric method. The results were compared with the values ​​established by Normative Instruction No. 13/2005. Regarding the pH parameter, the samples showed values ​​in agreement with the legislation, ranging from 3.9 to 5.3. The samples had an alcohol content of 38.0 to 41.0% vol, in accordance with the values ​​established by the legislation. The copper concentration presented a result that varied from 1.63 ± 1.04 to 4.96 ± 1.04 mg L-1, consistent with Brazilian legislation. The proposed work has potential application in the region for monitoring the quality in relation to the copper contaminant, allowing a quick action by the producers, in order to correct detected deviations.
