CADENAS CORTAS DE SUMINISTRO DE ALIMENTOS: UNA CARACTERIZACIÓN EN LOS MERCADOS LOCALES A TRAVÉS DE ESTUDIOS EMPÍRICOS

Este estudio tiene como objetivo analizar el arraigo que los productores y consumidores presentan en su interacción en los mercados locales a través de estudios empíricos en cadenas cortas de suministro de alimentos. Para ello, se utilizó la metodología de revisión sistemática para analizar las publicaciones sobre las cadenas cortas de suministro de alimentos, disponibles en la Web of Science, SCOPUS y bases de datos de material complementario. Para este propósito, se utilizó el software Ucinet como ®. Los resultados mostraron que, de los 26 estudios encuestados, publicados entre 2014 y 2019, 21 tienen aplicabilidad empírica. Es posible vislumbrar, en estos estudios, que el aspecto social es el que tiene mayor protagonismo, pues incluso son capaces de servir de puente entre diferentes mundos sociales, tanto en sus componentes de necesidades como en los de su potencial. Por otro, el aspecto económico aparece a veces de forma neutra o teniendo la principal motivación para reducir los costes de transporte y eliminar los agentes intermedios que representaban grandes gastos. Algunas preguntas, como el cuidado ambiental a pequeña escala en propiedades pequeñas, por ejemplo, se muestran como lagunas en el estudio, lo que plantea la pregunta: ¿las cadenas cortas de suministro de alimentos (SFSC) podrán limitar el daño ambiental generado y también podrán promover externalidades positivas producidas por algunos modelos agrícolas, en términos de mejora del paisaje o protección de la agrobiodiversidad? Se destacó el papel de la confianza en la relación productor/consumidor. Los otros estudios son investigaciones.
