Abstract

The objective of this work was to perform somatic cell count (CCS) and Total bacterial count (CBT) analysis to evaluate the quality and hygiene of the in Natura milk produced and marketed in two properties in the city of Mogi das Cruzes-SP.
With the results obtained, it is possible to verify whether the milk samples were according to or not according with the limits determined by the normative instruction 51 (IN51) altered by the normative instruction 62 (IN 62). On January 22nd of 2019, 12 samples were collected and analyzed for CCS and two for CBT from the properties under study. The results obtained for CCS revealed values of 67% (4/6 samples) and 83% (5/6 samples) were in non-conformance with IN 62. The high numbers of cells present may negatively influence because they compromise the milk componentes and interfere with the quality of the final
product to be consumed. In the latons of the properties the results obtained through the analysis for CBT were 210,000 UFC/mL at property 1, while in property 2 the values found were 9,000 UFC/mL, both of them not exceeding the parameters stipulated by IN62. Observing satisfactory values for CBT, which occurred due to hygiene and adequate management measures at the time of milking.
