Abstract

Aquaculture has become a vital contributor to the supply of animal protein, especially when projections show a considerable increase in population, which favors an increase in per capita consumption of fish. Tilapia is the most important species in Brazil, and when the production of this species is observed, it is verified that there has been a considerable increase in production in recent years. Characteristics such as rusticity, good palatability, feed conversion and protein content are important points of tilapia that made it gain visibility. However, the increase in fish farming has led to concerns about the welfare of fish at all stages of production, from capture, transport, stunning and slaughter. Measures that always seek to carry out the necessary management in accordance with the well-being are being prioritized, even though there is still no specific legislation with regard to fish. Therefore, the study of the consequences of different pre-slaughter stocking densities and stunning methods such as thermonarcosis and asphyxia on the biochemical, respiratory and muscle injury parameters associated with the quality and sensory characteristics of Nile Tilapia fillets becomes important to provide subsidies for the aquaculture industry to improve fish management techniques.
