The discussion on sustainability must involve the entire society, whereas it is a global need. To achieve sustainability, it is necessary to act on economic, social and environmental dimensions in a balanced way. Establishments that produce food generate a large volume of organic and inorganic waste, and although there is no enforcement of environmental laws, the implementation of quality programs and systems is valid. The purpose of this study is to evaluate the environmental sustainability actions developed by a commercial restaurant located in the municipality of Araraquara, in the state of São Paulo. The methodology used is of bibliographic review and case study application. The research results demonstrate that the restaurant management is environmentally aware, because many initiatives taken and others a being planned. Concluded that even there is no specific legislation, the company has been responsible as to the generation and correct disposal of waste.
